Travel tips/suggestions for southern Florida???

We are trying to think of something relatively modest to do for our kids' spring break this year and are thinking about a 4 or 5 day trip to Florida because it's drivable for us. We are open to either the Gulf or Atlantic coast. Want to be on the beach for a few days in either a decent hotel/resort or a VRBO/AirBnB. No interest in Orlando for this trip - have been before and one of the kids has a school trip to Disney around the same time anyway.

Am interested in a few things if anyone has ideas or suggestions:
- Specific places to stay.
- Activities other than sitting on the beach, including day trips. For example, we've thought about doing a day trip into the Everglades. Don't know that we are interested in fishing - just not really our thing - but wouldn't totally rule it out just as a reason to get out on the water, especially if we were virtually certain to have a good day of it in terms of actually catching some stuff.
- Specific to the Everglades idea, any particular things to do or see. Also, whether we'd be better off staying on the Gulf or Atlantic side of Florida.
- Other ideas??

Thanks!!!
